I've been following the Bread Baking Babes since May 2012 and their choices have always been absolutely delicious... That's the reason why, I never halve their recipes but I DOUBLE them with no fear. I know I can trust them, I know they would never let us "Buddies" down.
Katie of "Thyme for Cooking" delighted us with stuffed bread. As my children are not so keen on caramelised onions, I've filled my loaves with ingredients I know they love, added healthy ground flax seeds and replaced some of the white flour with whole wheat flour.
And they really loved them - we all did: fantastic bread with soft crumb - brioche like, I'd say. Thank you Katie, another winner!

Sekowa Special Baking Ferment is a made of organic wheat-meal, organic corn flour, organic pea flour and organic dried honey (flower), it's sold in a 250 g small container and is used to replace conventional yeast. According to Wikipedia, it was developed in the 1920s by Hugo Erbe, a musician and inventor from South Germany, who ran a bakery in Ulm and who intensively dealt with the biodynamic agriculture by Rudolf Steiner.
The procedure may sound complicated, but it's not and it only requires a little working time.
Within a few days I've baked Rye Bread, Spelt Bread and Sweet Bread with Butter and Raisins and loved all of them. As I said, it's a milestone in my kitchen.

Soda Bread is one of the recipes my children loves to make. It's so simple and delicious and versatile! This time we also made it with spelt and 6-grain flour.

Not only did Paola prepare such a lovely Soda Bread, but she also made her own butter to gain the buttermilk. Well done, Paola, that's awesome!

Claartje took an amazing picture (which merited the XL size!)...my eyes do not know where to focus first: on the beautiful landscape, on her lovely dog or on her delicious soda bread, made with toasted seeds and some whole wheat flour... Wish I were there!

There's something in the air... the scent of the loaf baking in the oven.
My children just ran downstairs: "Mommy, what are you baking? Can we have some, please, pleaseeee!"
No doubt this recipe was going to be a winner: Bread Baking Babe Tanna of "Mykitcheninhalfcups" made it combining 5x Sweet Portuguese Bread recipes she had found in her baking books. She must have picked out "la crème de la crème" of them and I am pretty sure, the addition of ground flax seeds was her own brilliant idea.
The texture of this bread is "dream-fully" soft and its taste and scent are very similar to our "3-Kings Day Swiss Bread" (as the kids made me aware of).
It needs a sponge made 12 hours in advance (overnight) and it's baked in a round and well oiled baking pan.
As the children reserved the second loaf for tomorrow's breakfast (insisting not to freeze it - please, pleaseeee!) I can really say, this recipe is a winner.
PS: The next time I'll make it, I'll replace 1/3 of the flour with whole-wheat flour and I'll even add some raisins to it. Or I'll replace all the flour with spelt/whole spelt.
PPS: The original recipe was baked by the Bread Baking Babes in August 2010 and the kitchen of the month was Tanna of "Mykitcheninhalfcups".
Uuuh che buon profumino che c'é nell'aria... tutto merito del delizioso pane dolce portoghese che sta cuocendo nel forno. Profumino che ha addirittura "attratto" i miei bimbi in cucina: "Mamma, cosa stai cuocendo di buono? Possiamo averne un pezzettino, per favore, per favoreeee!!"
