After having baked tons of banana-yoghurt muffins during the past weeks, I really was in need for something new to "let disappear" the over-riped bananas, abandoned in the fruit basket.
And there it was, hidden in the pantry, the gingerbread spice mixture I've made some months ago.
For some it may be a bit early to let the Christmas scents into the house, but for me, it's never too early to experiment... ;-) At least I'll have my "secret weapon" ready in time.
These muffins domed wonderfully and did not deflate. Just remember to bake them at 200°C in the first 10 minutes and then lower the temperature to 180°C: it should do the trick.
